Pumpkin Cyser

On 11/07/08 I tried a crazy cyser unlike any recipe I have yet to find: A Pumpkin Cyser. There are all kinds of problems in trying to convert the starches of the pumpkin to fermentable sugars. Here's the recipe:

4-007

Primary
12 lb Clover Honey
2 lb Brown Sugar
3 gal Apple Cider
1 can (15 oz) Libby's Pumpkin
2.5 tsp Pectin Enzyme
5 tsp yeast nutrient
1 pkt EC-1118 (hydrated)
Water to 5 gal

OG: 1.151

Secondary
4 Cinnamon Sticks
1 Vanilla Bean

Racked 11/22/08; SG: 1.012

maybe a pumpkin braggot would work better? you could use some 6-row or something to increase conversion. pumpkin beer is nothing new, so i'm sure there's a lot of recipes to work off of out there.

you might get in touch with jordan (jmesserer)...last time i talked to him (well over a year ago) he was going to do a braggot, so he may have some input. there's also no lack of equipment around the club, so don't feel bad about asking to tag along on a brew day.

Damn, I admire your experimentation a chocolate and pumpkin mead. I'm just a neophyte and get scared when I deviate from a recipe.

I have used canned pumpkin in a holiday spice beer but never in mead.

How does the lack of starch conversion present in your mead?

I'm also how they both tasted when you racked them.

We must share some meads soon.

So far the mead is clearing slowly and I am a little worried about the starch conversion. I hope that the enzymes will get to work! At worst, the starch should just make it cloudy. As for the taste, I got a sweet pumpkin pie when I first brewed it and when I last racked it, I the pumpkin was less pronounced with more of a cinnamon flavor.

Yes, we must get together for some mead tasting!

The Pumpkin Cyser got 3rd place in the 5th Annual Valhalla competition on October 17th, 2009! Woo hoo!
