Beer's unheralded ingredient: yeast

St Arnold is taking on the challenge of bringing some recognition to the importance of yeast and what it brings to the beer.

This is really cool. I know lost of us often talk about doing experiments like this and brewing the same beer, using the same wort, with different yeast at the same time for comparison. St. Arnold doing it under there precisely controlled conditions should really show off the differences that just the yeast makes. I'm afraid though that since the experimental batches will only be offered on draft that we may not have any around here given how most bars around here would never considered caring something like that. :(

I did 4 small batches of the same wort a while back with different but similar yeast. It was eye opening to see the difference.

Safale US-05
WLP060 - American Ale Yeast Blend
WLP028 - Edinburgh Ale Yeast
Wyeast 1275 Thames Valley Ale

US-05 was weak compared to the others And Thames Valley stood slightly above the others, IMHO.

Of course, I am the one I want to please, so I might, I say might, do more tests with a few other yeasts. I have found the RIGHT yeast can make a big difference overall.
